BOULDER, CO - The James Beard Foundation, a premiere award issuer of culinary excellence often recognizes restaurants with exceptional service, food, and impact. They recently made a surprising discovery when they visited the Balstin’ Wings trailer in the parking lot of a local auto parts store.
Chef Chet of the Blastin’ Wings trailer restaurant was awarded the James Beard award for serving his wings on paper plates. Among the bustling crowd at the window and the hand drawn sign, he said, “it’s really surprising to win the award. I was just doing what I thought the industry did.” The wings were prepared in a deep fryer and then tossed in 1 of 5 sauces before serving to clamoring customers. The James Beard Award judges deemed that the meal was suitable for most but what really made it different was the Kirkland brand paper plates that were purchased just that morning.
One judge told us, “It was remarkable to see these wings were served on fresh plates and what made it really stand out among its competitors was the napkins, also fresh. They were placed under the plate on a sparkling stainless steel counter beside the open kitchen. Just marvelous.”
Chef Chet also mentioned that he may start serving pome frites, or French fries soon.
